About the coffee

This coffee grows in the Guji zone, which is on a high altitude.
Whole ripe cherries are hand-sorted, to remove unripe and overripe cherries to maintain consistency and quality for roasting.
The cherries are fermented in flotation tanks for 24 to 36 hours, after which they are sun-dried for 15 to 20 days on special drying beds.
The cherries are covered in shade nets to dry slowly, improving the coffee quality. This process makes the sweetness and flavour from the coffee cherries infuse into the coffee bean itself. Our roasting endevours to accentuate the aroma, sweetness and fruitiness when brewed.
